Ola! I decided to have a last-minute Mexican celebration. On May 5
th the young seminarian, Francis, who was gifted with a chalice from St. Mike’s came to this side of the city for a short holiday. He rested in the flat next to me. He is here from Zambia, but like most he cannot return home as he had planned.
My student and neighbor Julius, whom I did a recent post about was invited to come as well as Abdalla, the tortilla king! We made chicken enchiladas, Pico de Gallo, guacamole, Mexican rice, tortilla chips and Stoney Ginger Soda. This cuisine is familiar now for Abdalla, but the other two...What in the world, but so much fun to see them enjoy each and every bite.
Like you just pushing through this pandemic and figuring out fun ways to give to others.
